Raw endive stew for around 10 people


5 kilogr. of potatoes
about 1 kg. of finely cut endive
2 bags of grated cheese
2 double packs of dry smoked bacon
1 full dinner spoon of mustard
100 gr. of butter
2 to 5 dl. of warm milk
aromat
pepper
3 pieces of smoked sausage

preparation:

1. peal the potatoes and boil them until they're done; about 25 minutes
2. heat up the rookworsts in a pan
3. wash the endive in a strainer (colander preferred)
4. bake the bacon
5. heat up the milk
6. pour off the potatoes over the endive-holding strainer
7. mash the potatoes to a fine mash, using the butter, mustard, aromat, grated cheese, the pepper and, if necessary, some of the warm milk.
8. mash in the bacon bits (vegatarians may choose to add some chopped up cashew nuts instead) and the endive
9. check flavour and add more aromat, pepper or mustard if desired
10. serve quickly before it cools
11. tasty on the side: pickles, mustard, apple sauce, pickled onions
