Groninger mustard soup for 5 persons


50 gr. butter
60 gr. flour
½ cut-up onion
6 dl milk
6 dl water
2 bouilloncubes
100 gr. mager gerookt spek (moet worden uitgebakken)
¼ of a small leek
1 dl of whipped cream
2 dinner spoons Marne Groninger mustard (Zaanse crude mustard from AH is also good)

preparation:

1. cut up onion and bake in molten butter
2. take pan off fire and add flour
3. stir the mixture on a low fire until it's relatively well done
4. take pan off fire again and add the milk plus 2 dl. of the water
5. let soak for about 5 minutes
6. heat pan up good and remove lumps by stirring into a whole, viscid soup
7. as soon as the soup starts boiling keep stirring only with a wooden spoon
8. add the rest of the water plus the bouillon cubes
9. add mustard and let the whole boil out softly on a low fire for about 20 minutes
10. in the meanwhile, cut up the leek into very fine bits
11. after the twenty minutes (keep stirring regularly!), add the cream
12. put some leek and bacon into the soup bowl and pour the soup on top
13. ready to serve
